Can’t decide between a chewy, fudgy brownie and a crisp, sweet cookie? Why not enjoy both at the same time?
I created this dessert when I couldn’t make up my mind about whether I wanted to make a pan of brownies or a tray of cookies. It’s the ultimate in comfort baking – decadent, indulgent and, what’s more, it’s so easy to make! You’ll already have most of the ingredients in your store cupboard.
Here’s my step-by-step baking guide to making this yummy brownie cookie. Let me know if you give it a try!
Here’s what you need to make 15 brownie cookies:
- 60g unsalted butter
- 220g bittersweet chocolate, broken into pieces
- 2 eggs
- 150g powdered sugar
- 100g all-purpose flour
- Pinch of salt
- ½ tsp baking powder
My easy-peasy brownie cookie recipe:
- Preheat the oven to 180°C and line a cookie sheet with parchment paper
- Melt the butter in a saucepan. Once completely melted, remove from the heat, and add the chocolate.
- Let it sit for a couple of minutes, then stir with a wooden spoon or spatula until the chocolate and butter are blended together
- Mix in the sugar and eggs, followed by the flour, salt, and baking powder
- Dip a tablespoon in flour and spoon out 2/3rds of a spoon’s worth of dough, placing it on the lined cookie sheet.
- Repeat the process, dipping the tablespoon in flour again as needed, so the dough doesn’t stick. Make sure you keep about 3-4cm between each cookie, as they will flatten and spread out in the oven
- Bake in the oven for about 10 to 12 minutes until the centre of the cookie starts to set, and the top goes wrinkly like a brownie
- Remove from the oven and place on a wire rack to cool slightly
These brownie cookies will keep for about four days in an airtight container.
Making brownie cookies: my top tips
- Like all good brownies and cookies, you can add extra sweet treats to make these extra delicious. Try chocolate chunks, nuts, or pieces of caramel
- Crumple and flatten your parchment paper before you line your cookie sheet with it – this helps it lay flat
- Did you know you can freeze these brownie cookies for up to three months? Spoon the dough out, place it in a freezer bag or airtight container, and put it in the freezer. Let the dough warm up to room temperature and bake as normal
