- 270g dark chocolate, broken into pieces
- 225g butter (plus extra for the ramekins)
- 5 large eggs
- 300g sugar
- 100g flour (plus extra for the ramekins)

My show-stopping chocolate fondant recipe
- Start by buttering and flouring your ramekins and place them in the fridge while you prepare
the fondants. Preheat the oven to 190°C - Melt the sugar and butter in a saucepan over a medium heat
- When well incorporated, remove from the heat and stir in the chocolate until melted. Pour
the mixture into a large bowl - Add the eggs one at a time using a whisk. Add the flour a spoonful at a time
- Pour the mixture into the ramekins, making sure each ramekin has an equal amount of
mixture - Bake the chocolate fondants in the oven for seven minutes (see my top tip below for more
info about baking) - Take out of the oven and gently remove from the ramekins. Serve immediately with a scoop
of ice cream (you’ll find a great recipe in my dessert cookbook!)

Making chocolate fondant: my top tip
The key to making a delicious chocolate fondant is all in the timing. If you undercook them, they collapse into a runny mess. Overcook them, and the cake mix bakes all the way through, meaning you don’t get that yummy melted centre.
(Although, even when overcooked, they’re still delicious!)
It’s essential to know your oven and how long it takes to heat up. It takes chocolate fondants seven minutes to cook in my oven, but In other ovens, it can take up to twelve minutes.
I recommend having a ‘trial run’ before you cook chocolate fondants for a special occasion like a dinner party. That way, you know exactly how long to cook them for the best results.
